White Wine Cultus Zelen. Wine of Vipava Valley, Slovenia.

Grape variety: 100% Zelen.
Harvest: Hand picked, full matured.
Maceration takes place for 3 days in contact with the skins in a stainless steel container. Gentle compression with a pneumatic press. Maturation 12 months in oak barrels and stainless steel tanks. In the cellar with less touch as possible we follow nature idea of wine. Throughout the whole year no sulfites was added. The wine is unfiltered and a minimum amount of sulfites was added just before bottling.
Zelen is an autochthonous local grape from the upper Vipava Valley. The main feature of this wine is the subtlety of herbal flavours like rosemary and lavender with a hint of fruity aroma. The wine has an enjoyable freshness reminiscent of dry white flowers. Combined with a wonderful versatility and sustainability in the taste he invites us to discover his complexity over and over again.
The wine goes well with white meat or fish, with soft cheeses or ripe summer fruits. To serve chilled at 10-12° C.
